Food is definitely my favorite part about Thanksgiving. Oddly enough, turkey isn’t at the top of my list of favorites. To be honest I could go without the turkey entirely and still have the best Thanksgiving feast. In fact, I’ve given it up cold turkey (see what I did there) for the last two years and had a no poultry thanksgiving. Not bad at all if you ask me because there’s so many side dishes that are just so good.
I love baked mac & cheese & stuffing with lots of celery. Honey sautéed carrots with a sprinkle of rosemary are the best and mashed potatoes with gravy are just so so good. My all time favorite for sure though is my apple cranberry pecan salad. YUM!
I’ve been making this amazing fall salad for the past four years and it has been quite a hit. Especially with the boys and my dad. They absolutely love it. The flavors of the cranberries, apples and pecans pair together so amazing! It’s seriously s delicious. Whip up this recipe in 10 minutes and enjoy!
Apple Cranberry Pecan Salad Ingredients
Spring Mix – I box makes approx 5 servings.
1 Bag of Dried Cranberries – You can get these at your local grocery store. I get mine from HEB or the bulk section at Sprouts Farmers Market.
Bag Pecan halves – Widely available in bulk or prepackaged during the fall season at all grocery stores and farmers markets.
1 Medium Green Apple – slice into wedges
1 medium Red Gala Apple – sliced into wedges
Whole Lemon – You’ll need lemon to keep your apples from browning
Feta Cheese or Queso Fresco for Crumbling – I prefer queso fresco and get “La Vaquita Queso Fresco” available in the cheeses section.
Vinaigrette of your choice – We like a strawberry vinaigrette.
Mix all dry ingredients in a salad bowl. Slice your apples into thin wedges. Bathe them in lemon juice then add to salad. Serve and top with your favorite vinaigrette and enjoy! It will be the perfect fresh paring to your Turkey or ham on Thanksgiving Day.
